Blue Ribbon Jerky
1/2 c. Dark soy sauce
1/2 tsp. Onion powder
1/2 tsp. Garlic powder
1/4 tsp. Ginger, powdered
2 tbsp. Worcestershire sauce
1/4 tsp. Chinese five-spice powder
 3 lbs. Lean beef brisket, eye of round or flank steak
Trim meat completely of fat and cut across
grain into slices 1/8 inch thick. To aid in slicing meat thinly,
freeze until ice crystals are formed. Blend all ingredients except
meat in small bowl. Dip each piece of meat into marinade, coating
well. Place in shallow dish. Pour remaining marinade over top, cover
and refrigerate overnight.
Oven method: Preheat oven to lowest setting (preferably 110 F).
Place several layers of paper towels on baking sheets. Arrange meat
in single layer on prepared sheets and cover with additional
toweling. Flatten meat with rolling pin. Discard towels and set meat
directly on oven racks. Let dry 8 to 12 hours (depending on
temperature of oven).
Dehydrator method: Arrange meat on trays in single layer and
dehydrate 10 to 12 hours, depending on thickness. Store jerky in
plastic bags or in tightly covered containers in cool, dry
area.

Texas Grilled Steak W/ Texas Sweet Onions
Here is a great grilled steak recipe with Texas sweet onions that is so mouth  watering ;that I want to fix some every time I think about it. It’s spiced up  with some jalapenos as well to give it some of that Texas fire.
 Here are the ingredients you will need.
1 small white onion, chopped
1 small purple onion, chopped
1 medium sweet onion, coarsely chopped (Walla Walla sweet onions are my favorite, but any sweet onion will work
3 Green onions, chopped
2 Jalapenos, chopped (you can remove the seeds if desired)
2 T Oil
1/4 c Sugar
2 T Cider vinegar
1 t Worcestershire sauce
1/4 t Salt
1/4 t Black pepper
ds Cloves
4 Beef strip loin (or rib eye) steaks, cut about 1 inch thick
Preparing the Texas Sweet Onions
First, chop up the onions and jalapenos. Sauté the onions and jalapenos in the oil using a large saucepan cooking over a medium-low heat for about 10 minutes or until the onions and jalapenos are tender. (Stirring occasionally)
Now stir in the vinegar, sugar, Worcestershire sauce, cloves, and the salt and pepper. Continue to cook the onions and jalapenos for about 20 minutes over low heat (stirring occasionally)
Cooking the Texas Grilled Steak
Season the steaks with your favorite seasoning and place them on a grill over the camp fire. If using a barbeque, cook the steaks over medium coals for around 9 to 12 minutes total, turning them at least once.
Remove the steaks form the grill and serve them with the onion mixture and enjoy.
Makes 4 servings.

Barbecued Spareribs
4 pounds of spareribs
2 teaspoons of salt
3/4 cup of catsup
2 tablespoons of vinegar
1/8 teaspoon of cayenne pepper
2 medium-sized onions, sliced
1/4 teaspoon of black pepper
3/4 cup of water
2 teaspoons of Worcestershire sauce
1 teaspoon of chili powder
Arrange spareribs in large baking dish or roasting pan. Add the onions, and   sprinkle with the salt and black pepper. Combine the remaining ingredients, and   pour over spareribs. Cover, and bake in at 350 degrees for about 1 1/2 hours,  basting often. Remove cover, and bake an additional 20 minutes longer.

Cat Head Biscuits (as big as a cat’s head)
2 cups of flour
1/4 teaspoon of baking soda
2 teaspoons of baking powderc
1 teaspoon of salt
5 tablespoons of lard or shorteningr
About 1 cup of buttermilk
Sift the dry ingredients together and cut in the lard or shortening. Add enough  buttermilk to make a soft dough. Pinch off about a lemon sized ball of dough for  each biscuit and pat out with your hands. Bake for 12 to 15 minutes at 450  degrees or until the tops are golden brown. Remove the biscuits form the oven  and rub butter on the tops of the hot biscuits to coat.

Fresh Apple Cobbler
1/2 cup of sugar
1 1/2 teaspoons of ground cinnamon
1/2 cup of pecans or walnuts
1 cup of self rising flour
4 cups of thinly sliced apples
1 cup of sugar
1 egg, well beaten
1/2 cup of evaporated milk
1/3 cup of butter
Mix 1/2 cup of sugar, the ground cinnamon and 1/4 cup of the nuts together. Place the apples slices in the bottom of a greased baking dish and sprinkle with the cinnamon mixture. Sift together 1 cup of flour and 1 cup of sugar. Combine the milk, egg, and the butter and add the flour and sugar mixture all at once and mix until smooth. Pour this mixture over the apples. Sprinkle with the remaining 1/4 cup of nuts. Bake at 325 degrees for about 55 minutes.
Serve warm with ice cream if desired.

Flour Tortillas
4 cups All purpose flour
1 1/2 teaspoons Salt
1 1/2 teaspoons Baking powder
4 tablespoons Lard or shortening
1 1/2 cups Warm Water
Combine dry ingredients in a mixing bowl. Cut in shortening. Make a
well in the center and add water, a small amount at a time, to form a
dough. Knead dough in bowl until smooth and elastic. Cover and wet
aside for ten minutes. Form dough into egg-sized balls and flatter
between palms. With rolling pin, roll each ball into a 6 inch circle,
about 1/8 inch thick. Cook on preheated ungreased skillet over medium
high heat, apprx. two min. per side, until tortilla looks slightly
speckled. Cover with a clean towel to keep warm and soft until served.
The tortillas may be cooled and stored in plastic bags in the freezer
for later use.

Carne Gisada Con Papas (Meat & Potatoes)
3 lbs round steaks, 1/2" Thick
2 lbs potatoes
8 ounces tomato sauce
1 1/2 teaspoons salt
1/2 teaspoon pepper, Ground
1/2 teaspoon cumin, Ground
1 clove garlic, Smashed
water
Cut round steak into cubes and brown in shortening in heavy skillet or Dutch  oven. Peel and cube potatoes (approximately in 1/2-inch cubes). Once meat is  slightly browned add potatoes and continue to brown. (Don't worry if it sticks to  the bottom of the skillet. Add tomato sauce, salt, pepper, cumin powder and  garlic. Add Approcimately ONE cup of water and simmer until meat and potatoes  are tender. Potatoes will thicken sauce.

Citrus Barbecue Sauce
1 Onion; Large Finely Chopped
1 tablespoon Ground Red Chiles
1/4 teaspoon Ground Red Pepper
1 each Ancho Chile, seeded and finely chopped
1 tablespoon vegetable oil
1 cup Orange Juice
1/2 cup lime juice
2 tablespoon Sugar
2 tablespoon Lemon Juice

1 teaspoon salt
Cook onion, ground red chiles, red pepper and ancho chile in oil, stirring frequently, until onion is tender, about 5 minutes. Stir in remaining ingredients. Heat to boiling, reduce heat to low. Simmer uncovered, about 10 minutes, stirring occasionally. Makes about 2 1/3 cups of sauce.

Genuine Texas Chili
3 pounds chuck roast -- trimmed of all fat
2 pounds lean ground beef
2 large onions -- coarsely chopped
5 cloves garlic -- finely chopped
3 tablespoons cumin seed
1 tablespoon salt
2 teaspoons fresh ground black pepper
1/2 teaspoon cayenne -- --or--
1/2 teaspoon ground red pepper
3 tablespoons chili powder
2 28 oz. cans tomatoes -- peeled, whole
2 15 oz. cans tomato sauce
14 ounces red enchilada sauce
1 1/2 cups water
Grind beef with coarse blade of grinder or cit into small pieces, larger
than regular ground beef. Combine meats, onions and garlic in
large kettle or
Dutch oven. Brown, stirring occasionally, about 10 minutes.
Add seasonings,
stirring to mix well. Shred tomatoes by hand so that both
tomatoes and juices
will fall into pot. Stir in tomato and enchilada sauce. Bring
to a boil. Reduce
heat and simmer over low heat 1 1/2 hours. Add water and cook
1 1/2 hours
longer. Cool. Skim grease. Adjust seasonings, if necessary.
Serve hot with crackers or hard rolls.

Wesley & Kathy's World-Famous Killer 4-Star Venison Chili
3 lb finely chopped venison
1 medium onion
4 cloves garlic
salt To Taste
1/4 cup (or more) chili powder
2 Tablespoon olive oil
1 Tablespoon cumin
1 can texas beer
1/2 cup water (or beef broth)
1 Tablespoon mexican oregano
2 Tablespoon masa (or corn meal **)
1 Teaspoon coriander Ground
Saute the meat in the oil until about 1/2 browned. Add onions and garlic and saute until onions are tender but not brown. Add chili
powder coriander and cumin and cook stirring for 4 – 5 minutes.
Do not allow to burn. Add beer and water/broth and simmer stirring
frequently until meat is tender. (About 45 minutes – 1 hour) When
meat is tender stir in masa dissolved in water or broth. Simmer
stirring frequently an additional 30 minutes or so. If possible allow chili
to cool and sit for at least 6 hours before re-heating and serving.

Grandmas Ohio Farm Chili
3 cans Tomato soup
4 cans Water
1 pound Hamburger
1 pound Hot sausage
1 Large onion (minced)
3 cans Kidney or chili beans
2 tablespoon Cumin
3 Bay leaves
3 teaspoons Tabasco
1 teaspoon Salt
Brown hamburger & sausage, drain off grease, then dump it all in a big pot, bring it to a boil, then simmer for 45 minutes. Serve over a scoop of mashed potatoes in a large bowl.
